Vegan Recipes: Quinoa Onion Rings

Don’t sleep on these!

These are a staple in the Vegan community especially here in Toronto. Although I’m not vegan, I was going through a period when I wasn’t eating meat so I tried this Vegan restaurant and to my surprise, this place was a hit! I mean it exceeded all my expectations to the point where my husband and I are almost regulars at this place even though we have no plans to become vegans. Besides their BBQ veggie burgers which taste better than regular burgers, they are well known for their crispy battered quinoa onion rings.

Here’s how to make em 🙂

In a deep pot, heat 3 inches of oil to 350 degrees.

Add onion rounds and flour to a resealable plastic bag and toss.

Combine puffed quinoa, breadcrumbs, thyme, and salt on a plate.

Whisk together buttermilk, eggs, and cornstarch.

Dip each floured onion ring in buttermilk mixture to coat, followed by quinoa mixture.

Fry in small batches for 2 – 3 minutes until crisp and golden brown, and drain on paper towels.

Combine mayo, garlic, lemon, and salt (to taste) for dipping sauce.

Serve hot onion rings with garlic mayo for dipping.
